How Do You Prepare Fresh Corn for Freezing?

Before you get to freezin’, make sure you prep your corn first. No matter which method you choose, you’ll need to shuck your corn before starting. You can also grab your freezer bags and a permanent marker (to write the date on the bag) so you can dive right in.

1. How to Freeze an Unblanched Corn Cob

Calling all corn-on-the-cob lovers! This corn freezing method is the simplest one yet. Here’s how.

Directions

  1. Shuck corn and remove corn silk
  2. Place corn cobs into freezer bags and push air out
  3. Date airtight freezer bag with a permanent marker
  4. Place bag into the freezer

2. How to Freeze Blanched Corn Kernels

Blanching is a very traditional cooking method used to keep fresh produce for longer periods of time. Plus, it helps remove dirt and keeps your corn bright and yellow.

Directions

  1. Shuck corn and remove corn silk
  2. Bring a large pot to a boil
  3. Place corn cobs into boiling water to blanch (7 minutes for small cobs, 9 minutes for medium cobs and 11 minutes for large cobs)
  4. Immediately place corn cobs into ice water for the same length of time
  5. Remove corn from pot and pat dry with paper towels
  6. Cut kernels off of corn cob and pour into freezer bags
  7. Push air out of bags and date bags with a permanent marker
  8. Place bag into the freezer

3. How to Freeze Unblanched Corn Kernels

If you were wondering if you can freeze corn without blanching, the answer is yes! Pro tip: When freezing corn kernels, make sure you allow enough space for the kernels to breathe. We recommend freezing corn kernels in a single layer.

Directions

  1. Shuck corn and remove corn silk
  2. Cut kernels off of corn cob and dump into a bowl or container
  3. Pour corn kernels into freezer bags and push air out
  4. Date airtight freezer bag with a permanent marker
  5. Place bag into the freezer

How Long Does Corn Last in the Freezer?

Unblanched frozen corn, whether in cob or kernel form, should last for about 6 months stored in an airtight freezer bag. We recommend storing frozen blanched corn for about 3 months in the freezer. That sure beats storing fresh corn in the refrigerator—which lasts for about 1-2 days. (Once you’re ready to use, try cooking corn one of these ways!)
