How to Make Garden Party Scones

This recipe is pretty straightforward, but in order to make it, you’ll need a scale; the measurements are by weight, rather than volume. That’s not a bad thing. Here’s why it’s important to weigh your ingredients.

Ingredients

  • 500g plain flour
  • 28g baking powder
  • 94g butter
  • 86g sugar
  • 2 eggs
  • 140ml buttermilk
  • 100g sultanas, covered in hot water and left to soak for 30 minutes

Instructions

Step 1: Gather your materials

Preheat your oven to 350° F. You’ll need two mixing bowls, as well as a scale to weigh your ingredients.

Step 2: Mix the ingredients

Mix the flour, baking powder, butter and sugar together in a bowl; stop mixing when crumbs are formed. In a separate mixing bowl, whisk together the eggs and buttermilk.

Step 3: Combine ingredients

When the eggs and milk are fully combined, add them to the crumb mixture and mix until smooth dough is formed. Then, add the sultanas—mix them in until they’re evenly distributed. Once everything’s combined, take the dough out of the bowl, flatten and cover it. Leave it to rest for 30 minutes.

Step 4: Shape the scones

After the dough has rested, roll it out to 2.5 cm thick (about 1 inch) and cut it into whatever shapes you’d like for your scones. Rest them for another 20 minutes, and then brush the tops of the scones with egg wash.

Step 5: Bake and serve

Bake your scones in the oven for 10-12 minutes, or until they’re golden brown. Cool them, then enjoy—the royal family’s Instagram recommends serving them with jam and clotted cream.
