Have an abundance of baby tomatoes left over? Consider roasting them in the oven! These roasted cherry tomatoes come out juicy, slightly sweet, and are the best snack on a clean eating, healthy and low-carb diet. They're delicious!

These perfectly roasted cherry tomatoes couldn't be easier and make the tastiest side dish. Normally, I like to roast mine with a combination of rosemary and thyme, but any herbs will work. Look to use something that matches the flavor profile of whatever you are cooking.

These also make an amazing quick pasta sauce and are delicious over a bowl of brown rice or quinoa with some fresh Parmesan, ricotta, or goat cheese. To be honest, these taste amazing on almost anything - pizza, balsamic chicken, seared fish  - everything!

Key Ingredients For Roasted Cherry Tomatoes

There are just a few simple ingredients in these roasted tomatoes. In fact, you probably already have all of them in your kitchen. Here's what I used.

  • Tomatoes: This recipe might be for roasted cherry tomatoes, but you can use grape tomatoes instead. Don't let the recipe name box you in.
  • Olive Oil: This helps the tomatoes roast up nicely. If you don't have olive oil, you can use avocado oil or ghee instead.
  • Garlic: Use fresh garlic cloves. As they roast, they release flavinoids that enhance the flavor of the tomatoes in a way that garlic powder or garlic salt just doesn't.
  • Italian Seasoning: You can either buy jarred Italian seasoning or make your own. My Italian seasoning recipe has dried herbs, including oregano, thyme, basil, garlic powder, marjoram, rosemary, and sage. The perfect combination to season any Italian dish!
  • Salt and Pepper: Use as much salt and pepper as you want to enhance the flavor of the tomatoes as they roast. You won't need much if you use my homemade Italian seasoning recipe.

How To Use Roasted Tomatoes

There are lots of ways you can use these scrumptious roasted tomatoes! I like to eat them as a snack because they are so delicious all on their own. Of course, you can use them on top of homemade pizza. Or, you could add them to your favorite cobb salad. They will release lots of flavor into the salad mixture.

These roasted tomatoes also taste delicious when they are mixed in with your favorite pasta recipe. Add them to this one-pot spinach and tomato pasta to elevate the flavors! They are perfect in this one-pot tomato basil pasta as well.

Recipe Tips And Ideas 

Follow these tips to make sure that these tomatoes turn out tasty every single time!

  • If you want bolder tastes, then use fresh rosemary, thyme, and basil.
  • Toss the tomatoes in the olive oil and spices in a mixing bowl before placing them on the baking sheet.
  • Place a sheet of parchment paper on the baking sheet before you roast the tomatoes. The tomatoes tend to stick to the baking sheet as they roast.
  • Before serving, add a drizzle of balsamic vinegar on top, and then add some shredded Parmesan cheese, crumbled goat cheese, and fresh mozzarella. This makes an amazing Caprese salad.
  • Finish the dish with fresh basil. 
  • Add some sliced onions to the pan with the tomatoes. Then add it to pasta with a drizzle of olive oil, all the pan juices, and top with Parmesan cheese.

Can you roast tomatoes in the air fryer?

Yes, you can roast tomatoes in the air fryer. They will make a bit more of a mess than other types of food that you make in the air fryer, but it's definitely possible.

Just cook them in the air fryer at 375°F for 10-12 minutes. Check on them after about 8 minutes to make sure they are not over-roasted!

How do you store leftover roasted cherry tomatoes?

Store leftover roasted cherry tomatoes in an airtight food storage container in the refrigerator. They will stay fresh for 1-2 weeks. You can also keep them even longer in the freezer. They will stay fresh in the freezer for up to 6 months.

To freeze roasted tomatoes, just lay them in a single layer on the baking sheet and place the baking sheet in the freezer. After they are all frozen solid, place them in a resealable freezer-safe food storage bag.

Keep the bag in the freezer until you are ready to use them!

Can you roast other types of vegetables with tomatoes?

Yes! You can place other vegetables on the sheet pan with the tomatoes. Add some:

  • Asparagus spears
  • Cauliflower
  • Broccoli
  • Thin-sliced carrots

What types of tomatoes are best to roast?

Smaller tomatoes will roast better. I suggest using Roma, cherry, or grape tomatoes to roast.

Why do roasted tomatoes taste better?

When you roast a cherry tomato, the flavors are concentrated and taste bolder and more intense. Plus, it has more flavor and liquid. You will enjoy it by itself or with your favorite pasta.
