McMillan Bread Pudding

Ingredients

  • 2 large eggs, room temperature
  • 4 cups 2% milk
  • 2 cups sugar
  • 1/2 cup unsalted butter, melted
  • 1 tablespoon ground cinnamon
  • 1 tablespoon vanilla extract
  • 1-1/2 teaspoons ground nutmeg
  • 2 loaves (1 pound each) day-old Italian bread, cut into 1-inch pieces
  • STREUSEL:
  • 1 cup packed brown sugar
  • 3 tablespoons all-purpose flour
  • 3 tablespoons unsalted butter, softened
  • Sweetened whipped cream, optional

Directions

  • Preheat oven to 350°. In a large bowl, whisk the first 7 ingredients until blended. Gently stir in bread; let stand until bread is softened, about 15 minutes.
  • Transfer to 2 greased 13x9-in. baking dishes. Bake until puffed, golden, and a knife inserted near the center comes out clean, 30-35 minutes. In a small bowl, mix streusel ingredients; sprinkle over tops. Bake until golden brown, about 5 minutes longer.
  • Serve warm, with sweetened whipped cream, if desired.
