Spiced Apple Muffin Bread

Ingredients

  • 2 large eggs, room temperature
  • 1 cup 2% milk
  • 1/2 cup plus 1 tablespoon sugar, divided
  • 3 tablespoons canola oil
  • 2 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon plus 1/8 teaspoon ground cinnamon, divided
  • 1/4 teaspoon ground allspice
  • 3 medium tart apples, peeled and finely chopped

Directions

  • Preheat oven to 350°. In a large bowl, beat eggs, milk, 1/2 cup sugar and oil until well blended. Combine flour, baking powder, salt, 1/2 teaspoon cinnamon and allspice; gradually beat into sugar mixture until blended. Fold in apples.
    Transfer to a well-seasoned 10-in. cast-iron or other ovenproof skillet. Sprinkle with remaining 1 tablespoon sugar and 1/8 teaspoon cinnamon. Bake until until a toothpick inserted in the center comes out clean, 35-40 minutes. Let cool 10 minutes; serve warm.
