TikTok has become the go-to for wild and weird food trends, like this taco-infused vodka (don’t knock it till you’ve tried it) and blooming marshmallow flowers that’ll give your hot cocoa a touch of elegance. The best TikTok videos, however, are the ones that show us how to perfect an everyday dish, and this time it’s a classic—roasted potatoes!
How to Make Crispy Potatoes (According to TikTok)
TikTok user Jeremy Scheck (@scheckeats), who claims that Kylie Jenner liked this recipe the last time he shared it, posted his hack for potatoes with skin so crisp, you can actually hear them crackle. He uses Yukon Gold or red-skinned potatoes, which are then cut up and put into a pot of cold water with an “obscene” amount of salt.
Boil the potatoes for 10-15 minutes, drain the water, and rough them up with a spoon before tossing them onto a baking tray.
You season them with Old Bay, paprika, black pepper, fresh rosemary and a generous dose of Maldon salt, pop them into the oven at 450°F, roast them until they’re brown, then turn off the oven—but let them sit in there for 10 more minutes. Then pull them out, sprinkle some parsley or dill on top, and voila—you’ve got crispy potatoes.

How Does This Work?
Jeremy uses food science for this hack. It might seem weird to add all that salt, but you’re not eating it, just creating a “diffusion gradient” (yep, we had to look it up, too) that ensures the potatoes are seasoned from the inside out.
Boiling them allows the potatoes to become tender enough to rough up, a technique that increases the surface area to volume ratio and gives your potatoes more places to get crispy. Then, keeping them in the oven for an extra 10 minutes will allow the potatoes to get even crispier without burning. Just don’t forget to turn the oven off!
What Can I Serve With My Crispy Potatoes?
Jeremy recommends serving these up alongside a steak, like this classic garlic-butter steak, but you also can use them as a side dish alongside a bread bowl of broccoli cheddar soup. It would be perfect for a cold winter night.
