Beach Ball Cookies

These cookies are as bright as beach balls and just as fun. They're delightful for parties, school bake sales or when you just want a playful cookie. Use bright, bold colors or soft pastels for springtime. —Darlene Brenden, Salem, Oregon

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup sugar
  • 1/2 cup confectioners' sugar
  • 1 large egg, room temperature
  • 1/2 cup canola oil
  • 1 teaspoon vanilla extract
  • 2-1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cream of tartar
  • 1/4 teaspoon salt
  • Assorted food coloring

Directions

  • Preheat oven to 350°. In a large bowl, cream butter and sugars until light and fluffy, 5-7 minutes. Beat in egg, oil and vanilla. In another bowl, whisk flour, baking soda, cream of tartar and salt; gradually beat into creamed mixture.
  • Divide dough into five equal portions. Tint each portion a different color with food coloring. Divide each portion into 24 equal pieces; roll each piece into a ball. Gently press together one ball of each color to form a larger ball; place 1 in. apart on greased baking sheets. Flatten slightly with bottom of a glass.
  • Bake until bottoms are lightly browned, 10-12 minutes. Remove from pans to wire racks to cool.
