Rainbow Corn Will Make Your Harvest Look Absolutely Magical

We’re in love with rainbow-themed foods right now. From rainbow toast to unicorn ice cream and unicorn cereal, our obsession can’t be stopped. We’ll eat any treats covered in rainbow sprinkles!

But what about bringing healthy rainbow foods into the equation? It can be done. You have to check out rainbow corn—it’s simply stunning and totally Instagram-worthy. Best of all, you can grow it in your backyard.

What Is Rainbow Corn?

It’s a variety of corn also known as Glass Gem. Part-Cherokee farmer Carl Barnes bred corn with these colors and passed seeds along to one of his students, Greg Schoen. Schoen then gave some seeds to Bill McDorman, a seed saver and writer who was astonished by the colorful kernels.

You don’t have to know Bill personally to get the seeds, though, You can buy Glass Gem seeds that grow beautiful red, pink, green, blue and orange hues of corn. Each cob looks slightly different, but you can expect dazzling colors.

What Can You Do with It?

The rainbow corn looks gorgeous, but don’t expect to use it like regular sweet corn. This type of corn has a hard outer shell, so you won’t be able to bite into it easily. However, rainbow corn is perfect for homemade popcorn.

Where Do I Find Rainbow Corn?

This probably isn’t something you’ll see at your everyday garden store. You can buy the seeds online from Native Seeds for just $3.25. Each packet comes with 50 seeds. If you want your garden to be full of rainbow corn, snag an enormous pack of 250 seeds for $12.95.

Here’s a handy list of tools to get your vegetable garden started!
