We got this macaroon recipe from Traci Booe from Veedersburg, Indiana. Traci adds chocolate buttercream to make hers extra special. This recipe makes six dozen cookies.
Ingredients
- 3 large eggs
- Dash salt
- 1-1/2 cups confectioners’ sugar
- 2-1/2 cups unblanched almonds, finely ground
Step 1: Get your egg whites right
Put your egg whites into a small bowl and let them stand at room temperature for about 30 minutes. While you’re waiting on the eggs, preheat your oven to 350°. Step 2: Add the sweetness
Kick your hand mixer up to the high setting and add the confectioners’ sugar one tablespoon at a time until you get stiff glossy peaks and the sugar has completely dissolved into the egg whites. Next, gently fold in the almonds.
Editor’s Tip: If you want to make these almond macaroons a bit extra, add in chopped nuts (almonds or pecans are a perfect choice) or mini chocolate chips. Just fold them into the dough with the almonds.
Step 3: Bake ’em up
Line a baking sheet with parchment paper. Place nicely rounded spoonfuls of the dough onto your baking parchment, making sure to leave about two inches between each dollop. Bake the cookies for about 8 to 12 minutes or until they’re firm. Then enjoy!
