Springform Pan
To make any classic cheesecake, you’ll need a good springform pan. This one is nonstick and leakproof ($18)—two absolute musts when baking these delicate cakes.

Tamper
Many of our favorite cheesecake recipes start with a basic graham cracker crust. (Here’s how to make it.) To get a perfectly packed crust with a consistent thickness, invest in this tamper ($4). It’s a little gadget that’s more useful than you’d think!

Slightly Larger Cake Pan
Leaky pans are always a concern with cheesecakes—even with a good springform. Prevent this problem by investing in a round cake pan slightly larger than your springform ($14). This will keep any filling from oozing out into your water bath or onto the oven floor.

Large Pan for Water Bath
Using a water bath—or bain Marie—is the secret to an evenly baked cheesecake. Use any large, sturdy pan for this job. We like to use a roasting pan ($31) because it’s just the right size—and it gives us a chance to make use of this pan outside of the holiday season.

Mini Cheesecake Pan
Who doesn’t love a miniature dessert? Make baking up pint-sized cheesecakes simple with this mini cheesecake pan ($30). This pan has removable bottoms so removing your tiny cakes is incredibly easy.
