It’s peach season! So take advantage of the fresh produce for this delicious vegan peach cobbler. If you can’t get fresh peaches, though, feel free to use frozen ones. They are frozen at their peak and should work just as well.

How to Make a Vegan Peach Cobbler

This recipe was inspired by California reader Michael Cohen’s version. Our tasting panel loved the bold peachy flavor.

Ingredients

For the filling:

  • 1/4 cup brown sugar
  • 2 tablespoons corn starch
  • 1/2 teaspoon lemon zest
  • 2 teaspoons lemon juice
  • 1/8 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 4 cups peeled, sliced fresh peaches or thawed, drained frozen peaches

For the topping:

  • 1-1/2 cups all-purpose flour
  • 1/2 cup brown sugar
  • 1-1/2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup cubed cold butter substitute, such as Earth Balance buttery sticks
  • 1/4 cup water
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/8 cup slivered almonds, optional

Instructions

Step 1: Make the peach filling

Preheat oven to 400°F. Mix together the brown sugar, corn starch, lemon zest, lemon juice, salt and cinnamon. Once mixed completely, fold in the peach slices and gently mix until the peaches are well coated. Pour the peaches and all of the sugar mixture into a greased 8×8-inch dish or small (about 1 quart) casserole dish. Bake for 15 minutes. Set aside.

Step 2: Make the topping

Meanwhile, whisk together all dry ingredients, from flour to salt. Cut in the vegan butter substitute until the mixture looks like a rough, sandy mixture. In a separate small bowl, mix the extracts and water together. Mix into the topping mixture until just moistened. If you want to add slivered almonds, stir them in gently.

Step 3: Finish baking

Drop heaping spoonfuls of the topping mixture on top of the peaches. Return the cobbler to the oven. Bake, uncovered, for 20-30 minutes more, until the topping is golden brown.

Serve the vegan peach cobbler warm with a scoop of vegan vanilla ice cream. Or, for a midnight snack (or breakfast!), eat a slice right out of the fridge.
