With two peanut-shaped cookies sandwiching a creamy peanut butter filling, it’s no surprise Nutter Butters are a favorite among peanut butter lovers. But if you can’t find ’em near the checkout counter at your local grocery store, you can easily bake a copycat version at home. Here’s how.

How to Make Copycat Nutter Butters

We’re basing this recipe on these cute cookies shared by Debbie Kokes of South Dakota.

Ingredients

For the Cookies

  • 1 cup butter-flavored shortening
  • 1 cup creamy peanut butter
  • 1 cup sugar
  • 1 cup packed brown sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1/4 teaspoon salt

For the Filling

  • 1/2 cup creamy peanut butter
  • 3 cups confectioners’ sugar
  • 1 teaspoon vanilla extract
  • 5 to 6 tablespoons milk

Pro Tip: For the best results, use a high-quality peanut butter. Or, try making peanut butter at home!

Step 1: Make the dough

Preheat your oven to 375°F. In a large bowl, cream the shortening, peanut butter and sugars until light and fluffy—about 4 minutes. Then, beat in the eggs and vanilla.

In a separate bowl, combine the flour, baking soda and salt. Add the dry ingredients to the creamed mixture and mix well.

Step 2: Shape and bake

For cookies that look like Nutter Butter Bites (see the photo above), shape your dough into 1-inch balls and place them 2 inches apart on ungreased baking sheets. Flatten to a 3/8-inch thickness by making cross-hatches with a fork.

For cookies that look like Nutter Butters, roll out the dough to a 1/2-inch thickness and use a peanut-shaped cookie cutter (like this one) to stamp out shapes. Then gently cross-hatch with a fork to make the dough 3/8-inch thick.

Bake the cookies (no matter the shape) for 7-9 minutes or until golden, then cool on a wire rack.

Step 3: Make the filling

For the creamy filling, beat together the peanut butter, confectioners’ sugar and vanilla in a large bowl. Add enough milk to achieve a spreadable consistency.

Step 4: Sandwich ’em up

Once the cookies have cooled completely, spread the filling on half of the cookies, then top with another cookie. Enjoy!

Pro Tip: If you’re a fan of peanut butter and chocolate (who isn’t?), try dunking them in melted chocolate for an even richer cookie experience.
