Step 1: Make the rhubarb syrup

First things first, you’ll need to make a homemade simple syrup infused with rhubarb. Here’s what you’ll need for your syrup:

  • 6 ounces chopped fresh rhubarb
  • 1/2 cup sugar
  • 1/2 cup water

Combine the rhubarb, sugar and water in a saucepan over medium-high heat. Bring to a simmer, then reduce heat to medium-low, cover and cook 10 minutes.

Let syrup cool to room temperature, then press through a fine mesh sieve like this one. Transfer syrup to a container with a tight-fitting lid and refrigerate until needed.

Step 2: Shake it up

This rhubarb gin cocktail is incredibly easy to whip up! Simply add gin, lemon juice, rhubarb syrup and egg white (if using) in a cocktail shaker filled three-quarters with ice. Secure lid and vigorously shake until everything is thoroughly chilled.

Step 3: Strain, top and serve

Finally, fill a Collins or highball glass with ice. Strain the rhubarb gin cocktail into your prepared glass. Top with club soda, garnish with a lemon slice and serve!
